I've always been confused by the concept of "aging", once the wine is in a bottle it's not doing anything other than settling if you dont rotate the bottles correctly. How exactly does it "age" with no outside stimulus at all? A bottle of something that was shit in 2019 will still be shit in 2029, it will just be a 10 year old shit vintage no?
Edit: having just had a bit of a read on wikipedia it all sounds like yuppie bullshit to me.
